Any Ideas On Family Food Meals?

THE POST:

I am seeking some ideas on what to cook my family at meal times as we are sick of eating the same old meals, my family include myself (vegetarian), my partner (meat eater) and my two year old daughter (meat eater), oh and my 5 month old daughter who doesnt actually eat solids yet.
At the moment we differ meals every day, including, spaghetti bologaise, pasta and sauces, vegetables with mash and meatballs or hot dogs(or veggie burger for me), quiche, pies, salads, cottage or shepards pie, fish with vegetables, as well as the basics now and then such as chips or waffles. plus other stuff which is not much interesting. can anyone give me any meal ideas or recipies which are just basic as i dont have a lot of time, or even which i can freeze, but we dont eat ready meals though! thanks, any ideas welcome.

    2-3 medium russet potatoes, peeled and cubed
    2 medium carrots, peeled and sliced
    1 1/2 tablespoons olive oil
    1 tablespoon dried basil
    1 tablespoon dried oregano
    1/4 tablespoon salt
    1/2 tablespoon pepper
    1 tablespoon paprika
    1 large zucchini, peeled and cut up into small pieces
    2 cloves garlic, minced
    1 cup mozzarella cheese (shredded)
    fresh parsley (optional)
    4-6 servings
    1. Put potatoes and carrots in greased baking dish (13×9).
    2. Drizzle with olive oil;add basil,oregano,salt, pepper,paprika and toss till coated.
    3. Bake at 425 F degrees for about 20 minutes.
    4. Add zucchini and garlic;stir up and return to oven for another 20 minutes or until veggies are tender.
    5. Add the cheese and return to oven till melted and garnish with parsley if desired

    “This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren’t big fans of bread crumbs.     INGREDIENTS:
    8 cups fresh broccoli
    1/2 cup butter
    2 tablespoons all-purpose flour
    1 small onion, chopped
    1 1/4 cups milk
    salt and pepper to taste
    4 cups shredded Swiss cheese

    DIRECTIONS:
    Preheat oven to 325 degrees F (165 degrees C).
    Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
    Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
    Bake in preheated oven for 30 minutes.

    “This is a simple and easy to toss together recipe using cauliflower. Serve this dish with Indian breads such as thin rotis or naans – even a pita bread will do!     INGREDIENTS:
    3 tablespoons vegetable oil
    1/4 teaspoon mustard seed
    1 pinch asafoetida powder
    1/4 teaspoon cumin seeds
    1 pinch ground turmeric
    1 hot green pepper, split down its length (optional)
    3 roma (plum) tomatoes, chopped
    2 tablespoons minced fresh ginger root
    1 potato, cubed
    1 head cauliflower, broken into small florets
    1/2 teaspoon white sugar
    salt to taste

    DIRECTIONS:
    Heat oil over a medium-high heat. Toss in the mustard seeds; when they start spluttering, add the asafoetida, followed by the cumin seeds, turmeric powder and the green pepper. Add the chopped tomatoes and ginger; stir and saute for a few minutes.
    Add the potato, cauliflower florets, sugar and salt; stir well and cook until the potatoes are cooked and the cauliflower tender yet crunchy. (For a crunchier cauliflower, add it when the potatoes are just getting done but not quite finished cooking).

    have you tried a mousakka, it consists of lamb mince courgettes, and white sauce really tasty,,, you can omit the lambs mince for yourself, and replace with quorn. or try a tuna past bake, or fried salmon, with cous cous,,,very tasty.. good luck

    get a delia smith cook book, they are dead simple and tried and tested, very exact measurements for people who are afraid to use dead recogning.

    Make a yummy Risotto! (make sure you use proper Risotto Rice, arborio i think it’s called)
    you can add any veggies you fancy, though my favourite is a mushroom risotto – add a little white wine with the stock and a dash of cream at the end – perfect. For your meat eaters, you could always fry or grill some diced chicken and serve that on top of the rice.
    And how about stuffed baked pancakes? maybe spinach and feta filling? Or pork and apple? Now there’s a quick one to make!
    you can also stuff any veggies with a meat/non-meat filling and bake them with cheese….
    If I ever lack inspiration, i surf the net for some new recipes…good luck!

    One of my favourites is Chorizo and Cannellini Bean soup:
    chop up an onion, 1lb white floury potatoes and some garlic, fry til brown, add 1L veg stock and paprika, simmer til potato cooked. Add 400g cannellini beans and 250g chorizo, wait until they are heated though, then serve with some parsley if you’re feeling posh.
